Danielle's Fantastic Hearty Omelet

Ingredients
1 package Montechevré Goat Cheese - 4 oz of Goat Cheese4 - egglands best eggs1/2 - White Onion (diced)1 package baby spinach 1 - tbsp olive oil1 - red bell pepper (Diced)1 - tbsp fresh chopped chives
Directions
Dice the Pepper and Onion
Add tbsp of Olive oil to small frying pan
sauté the Pepper and Onion in the Olive Oil, when they are cooked slowly add in the Spinach and let that cook down.

While that is cooking, beat the eggs in a small bowl.

Transfer cooked Spinach, Peppers and Onions to a plate and keep warm.

Pour Eggs into frying pan making use of leftover oil. Cook until done and flip to cook bottom side.

Cut the egg in half and place one half on each plate.

Scoop Pepper, onion and Spinach mixture onto each of the egg halves.

crumble up the goat cheese and sprinkle onto the top of the omelet - approximately 2 oz per half (The omelet is open faced.)

Sprinkle the chopped chives onto the top of the goat cheese and add salt and pepper to taste.

    Doesn't look very "healthy" and it is not low in calories or fat per serving..... 27.5 grams of fat per serving is not good.... - 2/5/09

    I never said it was "healthy" I said it was "Hearty", there is a difference. On sundays 27.5 grams of fat at breakfast is not a bad thing in our household because we only eat brunch and dinner.

    This is an easy and healthy breakfast item that is great for a weekend when you have 30 minutes to enjoy a cup of coffee and great smells in the kitchen. The longest part is the prep which is not bad. I would recommend this even if you are not a vegetarian. I know I am not. - 1/25/09
