Low Carb Spaghetti Sauce with Noodles !!

Ingredients
3 1/4 c. Hunts Tomato Sauce1 cup Mushrooms, canned, sliced1/2 cup Pepper & Onion Blend - Frozen (I use Bird's Eye)2 links Italian Turkey Sausage - (I used Shady Brook to calculate)1/4 c. Red Wine - Dry1 Tbsp. Olive OilSplenda, 2 packets Salt, 1/2 tsp or to tastePepper, 1/4 tsp or to taste Emeril's Italian Essense, 1 tbspParmesan Cheese, grated, 2 tbsp Pepper, red or cayenne, 1/8 to 1/4 tsp to taste
Directions
Fry turkey sausage, drain well.

Roughly chop frozen peppers and onions.

Mix All ingredients except Parmesan Cheese, Simmer for 30 minutes over med-low to let flavors marry.

Stir in parmesan chesse.

Adjust seasonings to taste.

Serve and enjoy

1 1/3 cup serving size. Makes 5 servings

Note for Low Carbers: YES! the noodles are purple. I use Tofu Shirataki Noddles (Yam Noodles - available at many international or Asian Markets), which are usually white like regular noodles. I boil them in 1/4 cup. dry red wine for a colorful, tasty treat.
