Chicken Breasts Stuffed with Goat Cheese, Dates and Spinach

4 boneless, skinless chicken breasts2 ounces soft goat cheese1/8 t. cayenne4 dried dates, pitted and chopped2 c. fresh spinach leaves1/2 t. paprika
Preheat the oven to 425 F. Line a baking sheet with parchment paper.
Place chicken between two pieces of plastic wrap. Flatten breasts to 1/4 inch thick with mallet. Place the chicken breast smooth side up on parchment. Spread each breast with 1 T. goat cheese leaving a 1/2 inch border. Sprinkle with cayenne and dates. Top with spinach. Beginning at the narrowest end, roll each piece jelly-role style. Place seam side down and sprinkle with paprika.
Bake 20 minutes. Remove from the oven and let stand on the baking sheet for 5 minutes.
To serve, cut crosswise in 1/2 inch slices.
