1/2 pound lean ground turkey2 tsp Mrs. Dash Southwest Chipotle seasoning1 cup frozen corn1 medium onion, diced1 15 ounce can black beans, drained1 15 ounce can diced tomatoes, drained2 cups salsa1 cup reduced fat shredded Mexican blend cheese2 egg whites1 cup 1% milk3 Tbsp olive oil1 tsp salt1 tsp baking powder1/2 tsp baking soda1/2 cup flour1 1/2 cup yellow cornmeal
Makes 8 servings.
Brown ground turkey with Mrs. Dash seasoning. While it is cooking, boil frozen corn for 3 minutes. Remove ground turkey from pan and saute onions. Add turkey, beans,corn, tomatoes, and salsa. Heat over flame. Place meat mixture in 13" by 8 1/2 pan. Top with cheese. In a large bowl mix egg whites, milk, olive oil, salt, baking powder, baking soda, flour and cornmeal. Spread cornmeal mixture in a thin layer over the meat mixture. Bake at 400 degrees for 25 minutes. Makes 8 servings.
