Ingredients
6 flour tortillias 1 can of refried beansi can enchilada saucemexican style four cheese reduced fat1 lb of ground turkey
Directions
brown and heat ground turkey in a pan. fill tortillias with beans and add ground turkey and roll up. Line each enchilada in a 9x13 dish. Pour enchilda sauce evenly over tortillias. Sprinkle cheese over tortillias and heat uncovered for 25 min. or until cheese melted. Serve and enjoy.

    I made my own refried beans with dried pintos, a bay leaf, cumin and garlic. I also used canned tomato sauce, diced tomatoes with chilies, and diced tomatoes with jalapenos. I subbed the flour tortillas with wheat and it came out great. - 3/31/11
