Ingredients
Directions
30 oz pure canned pumpkin (2 regular cans)14 oz (1 regular can) sweetened condensed milk1/2 cup fat-free pasteurized egg product (Egg Beaters or similar)1 tsp ground cinnamon1/2 tsp ground ginger1/2 tsp ground nutmeg1/4 tsp ground cloves(You can substitute pumpkin pie spice in place of cinnamon, ginger, nutmeg and cloves, if you prefer.)
Preheat oven to 450 degrees. Mix all ingredients in large bowl until uniform. Pour mixture into ungreased 13x9x2 rectangular baking/casserole dish. Bake uncovered for 15 minutes at 450 degrees. Lower heat to 350 degrees and bake for an additional 40 minutes, or until inserted knife or toothpick comes out clean. Remove from oven and allow to cool completely (at least an hour).
Once set, cut into 12 equal "squares" (as you would cut brownies/bars). Each gooey "square" is a serving.
For extra yummy goodness, top your serving of pumpkin yumminess with a small dollop of whipped cream (not included in nutritional info).
