Onion Rings

Ingredients

1/2 a large onion, cut into thick slices1/2 cup Fiber One cereal1 tsp olive oil1 Tbsp honey mustard
Preheat oven to 400 degrees F.
Separate onion slices into rings. Put on large plate and toss with oil and mustard.
Grind Fiber One into crumbs with food processor (or Magic Bullet blender). Put into quart baggie.
Transfer coated onions into baggie in small batches. Shake to coat with crumbs and transfer to baking sheet sprayed with cooking spray.
Bake 10 minutes; flip and bake another 5-10 minutes, until done but not burnt. (I burned part of my first batch by cooking 12 minutes per side.)
