Florentine Bacon Wrapped Chicken Rollups

1 box frozen spinach, defrosted1/2 cup ricotta cheese1/4 cup grated Parmesan Cheese1 cloves garlic, grated or finely choppedSalt and freshly ground black pepperA few grates nutmeg2 chicken breasts sliced lengthwise in half4 slices Turkey Bacon
Preheat oven to 400 degrees F.
Wring out defrosted spinach in clean kitchen towel.
Combine with spinach in a bowl, mix in cheeses, garlic, salt, pepper and nutmeg.
Cut into and across all the way through the chicken breasts. Season the chicken with salt and pepper. Fill each with a small mound of stuffing, roll up and wrap each breast with bacon to seal them, carefully covering the whole breast. Brush chicken all over with some extra-virgin olive oil and roast 18 to 20 minutes until cooked through.

This was yum! I wasn't sure how much 1 box of spinach equalled, so I used two blocks from a packet of frozen spinach (UK sizes). There was a bit too much spinach to stuff the chicken and it overwhelmed the dish. I'd halve the amount of spinach next time, and maybe add some ground chilli pepper. - 7/26/12
