Greek Tabouli

Ingredients
1 cup bulgur wheat1 cup water1/2 to 1 whole bunch parsley, chopped small1 tsp salt1 Tablespoon honey2 Tablespoons extra virgin olive oil4 Tablespoons fresh lemon juice (from 1 lemon)2 medium tomatoes2 small cucumbers1 cup feta cheese, cut up into small dice size cubes
Directions
1 - Boil water and add honey. (Sugar can be substituted)
2 - Put bulgur in nonmetallic (one with lid or lid substitute) and pour boiling water on top. Make sure the water measurement is exact or the bulgur will turn out mushy. Mix and place lid on top. Leave for 15 minutes. Do not lift lid or steam will escape. After 15 minutes lift lid and stir. Let cool on counter top of for a short time in the refrigerator.
3 - Chop parsley (remove stems). Start with half a bunch and add more if desired. Fresh mint may be substituted.
4 - Chop tomatoes into small cubes
5 - Cucumber should be peeled (optional), seeded and chopped into small cubes.
6 - Add lemon juice to the oil and stir.
7 - Add all ingredients to bulgur wheat and gently mix
8 - Add feta cheese and "toss"
