Stir-Fry Chicken

Ingredients
Celery, raw, 2 cup, diced Carrots, raw, 2 cups slicedScallions, raw, 1 cup, chopped 10 oz. pkg frozen peasUncle Ben's Instant Whole Grain Brown Rice, 8 cups cookedSesame Oil, 7 tbsp Kikkoman Lite Soy Sauce, 6 tbsp (remove)10 Chicken Breasts, diced in 1" pcs.4 eggs,whisked
Directions
Cook rice according to pkg. directions
Saute chicken in batches in 4 T. sesame oil. Remove from pan.
Pour whisked eggs into pan and cook "scrambled egg" style until firm. Remove from pan.
Add remaining 3 T sesame oil and saute vegetables all at once, covering and cooking for 5-10 minutes to let the steam "cook" the veggies.
Add rice, chicken and soy sauce to the finished meal.
