2 cups chopped raw Onions, 1 tbsp. Olive Oil, 1 Leek chopped, 4 cloves chopped Garlic, 6 cups Chicken Broth, 4 Chicken breasts chopped, 8 oz. shredded Monteray Jack cheese, 1 tsp. Black Pepper, 1 tsp. red pepper flakes, 2 tsp. oregano, 2 tsp. ground cumin, 6 cups Great Northern White Beans, or just remember to get 1 large jar of these beans, 1 Tbsp. Celery Flakes
I have played with this recipe to try to reduce calories and fat, while adding fiber. ***Cook onion in the oil; add spices, beans, and broth. Bring to a boil; add chicken and simmer for 45 minutes. Now add the 8 oz. shredded Monteray Jack cheese and stir well. This soup may be served with sour cream and additional cheese.
