Whole Wheat Pumpkin Muffins

Ingredients
1 1/2 cup whole wheat flour1/2 cup cane sugar1/2 teaspoon baking powder1/2 teaspoon baking soda1/2 teaspoon salt1/2 teaspoon nutmeg1/2 teaspoon cinnamon1 large egg1 large egg white1/3 can pumpkin1/3 cup unsweetened applesauce1 cup vanilla soy milk
Directions
Preheat oven to 350 degrees. Mix dry ingredients together. Mix wet ingredients together. Gently combine the dry with the wet ingredients. Do not over mix or the muffins will become tough. Spoon batter into a greased 12 cup muffin pan. Bake at 350 degrees for 30 to 35 minutes or until a toothpick inserted into the center of a muffin comes out clean.

Makes 12 muffins.
