Shepherds Pie

Ingredients
1 1/4 lb. red potatoes3 large cloves garlic, peeled3/4 cup reduced fat sour cream1/2 cup reduced fat shredded cheddar cheese1 lb extra lean ground beef2 Tbsp. flour4 cups mixed frozen vegis thawed3/4 cup beef broth2 Tbsp. ketchup
Directions
Cover potaotes and garlic with water in a large suacepan. Bring to boil on high heat. Reduce heat to low, simmer 20 min. or until potatoes are very tender. Drain; return to saucepan with sourcream, mash to desired consistency. Stir in 1/4 cup of cheddar cheese.

Preheat oven to 375. Brown meat in a large non-stick skillet. Stir in flour, cook 1 min. Add vegetabled, broth and ketchup; continue cooking 5 min.

Spoon meat mixture into 8-inch square baking dish. Cover with the mashed potatoes. Bake 18 min; sprinkle with remaining 1/4 cup cheese. Bake an additional 2 min.
