1 1/2 cups all-purpose flour1 cup sugar1/4 c. unsweetened cocoa powder1 tsp. baking soda1/2 tsp. salt1/4 tsp. baking powder----------------------------------------------------------------3 ripe bananas, mashed1/3 c. olive oil2 egg whites1/2 c. mini semi-sweet chocolate chips
Sift and mix the dry ingredients together in a large bowl.
Mix the bananas, olive oil, egg whites, and chips together in a small bowl. [Don't panic... This mixture will look gross.]
Incorporate the wet ingredients into the dry ingredients.
Pour into lined muffin tins. Bake at 350 degrees for 20 minutes. Makes 18 muffins.
