Couscous Salad

Ingredients
Directions
1 c couscous, dry1 c boiling OJ1 red apple, diced small1 green apple, diced small1 stalk celery, diced small1 c chopped walnuts1 c red onion, diced small1 c raisins without added sugar1 lemon
1. Bring OJ to a boil in the microwave. Put couscous in a bowl and pour OJ over it. Stir well. Put plastic wrap tightly over the bowl and put back in the mircowave.
2. While couscous is making, chop apples and swueeze lemon over it and mix. Chop celery, walnuts and onion. Add to the apple and toss.
3. Fluff couscous with a fork. Add apple mix and raisins. Mix thouroughly.
4. Let sit for an hour or over night before serving.
This makes about a weeks worth of 1 c lunches.
