Tuna Enchiladas

Chicken Broth, 1 can (10.75 oz) Silk, Vanilla Soymilk, 1/2 cupCorn Starch, 1/4 cupJalapeno Peppers, 1 TbspOnions, chopped 1/2 cupTuna, Canned in Water, 4 6oz. cansSoya Kaas Cheddar Style Soy Cheese, 4 oz **Manny's Flour Tortillas, Burrito Size, 8
Mix together milk and corn starch. Boil Stock. Stir in milk mixture and add chopped jalepenos. Meanwhile saute onion until tender with cumin in pan sprayed with Pam.
Drain tuna and add cooked onions and 1/3 c. soup mixture. Place 1/4 cup in each tortilla and roll closed. Place in 9 x 13 pan. Pour remaining soup mix over the top.
Cover and bake in 400 F oven for 20 min. Add grated cheese, cover and bake another 5 to melt cheese.
