Fast, but Fake Goulash

Ingredients
1 package of Bird's Eye Steamfresh Vegetables (asparagus, corn, and carrot mix)1 can kidney beans1 can DelMonte Zucchini in tomato sauce4 oz. Whole Wheat pasta spirals1/2 cup of dry quick (1 minute) oats
Directions
1) Put kidney beans, zucchini, and 1 cup hot water in a skillet and bring to the boil.
2) Microwave the Vegetable mix for 5 minutes.
3) Pour the pasta into the boiling skillet mixture.
4) Bring it back to a boil, cover, reduce heat, and stir occasionally while cooking for 15 minutes.
5) Add the oatmeal and stir to mix until all moisture is absorbed.
6) Fold in the cooked vegetable mixture.

Divide into 4 equal servings.

    Okay, I love thickening with oatmeal. Filling, no flavor change, and handy. Very tasty meal and the guys didn't even notice there was no meat. - 2/21/09
