Chickpea-Quinoa Pilaf

Ingredients
2 tbsp olive oil1 small onion2 cloves garlic.5 tsp cumin1 tbsp coriander seeds, crushedseveral pinches of pepper.5 tsp salt1 tbsp tomato paste1 cup quinoa2 cups cooked (or 1 can) chickpeas, drained and rinsed2 cups vegetable broth
Directions
Saute onion in olive oil for about 7 mins
add garlic and saute for 2 more mins
add tomato paste, coriander, cumin, pepper and salt; saute for another minute
add the quinoa and saute for another 2 mins
add the chickpeas and broth
cover and bring to a boil
once it's boiling, turn the heat to low, cover and cook for 18 minutes, or until the quinoa has absorbed all the water. Fluff with a fork and enjoy.

    It had a good taste to it but I probably would add more spices and less salt next time. I also had to cook at a higher heat in order for the water to get absorbed. Overall it was pretty good but probably won't be a regular dish on my menu. - 3/18/09
