Super-Easy Curried Sweet Potato Soup

2 tbsp. butter or margarine1 medium onion, chopped fine2-3 cloves garlic1 tbsp. ginger2 tsp. curry6 sweet potatoes, peeled, cubed1 pkg. baby carrots, choppedWater to cover1 vegetable bouillon cube
Heat margarine or butter in large pot. Added onions, garlic and spices. Saute for about five minutes, until onions are cooked and clear.
Add sweet potatoes, carrots, water and bouillon. Bring to a boil. Simmer on med-low until vegetables are tender and mushy.
In a blender, blend contents of pot together until soup is smooth. Makes 8-12 1-cup servings.
