Quinoa Tabbouleh Salad

Ingredients
* Red Tomatoes, 1 large * Peeled Carrot, raw, 1 small * Peeled Cucumber, 1 large * Quinoa - Any quinoa is fine (make sure you rinse them first) * Freshly Squeezed Lemon Juice, 1 * Parsley, 1/2 cup * Water, tap, 2 cups * Garlic, 1 clove
Directions
1. Rinse Quinoa to take bitterness out.
2. Boil Water and put 1 cup Quinoa to boil for about 30 min.
3. While the Quinoa is boiling on a chopping block chop carrots, cucumbers, tomatoes and garlic until their very small cuts. =)
4. Chop the parsley until fine.
5. Once Quinoa is cooked mix in all ingredients and chill.

    Delish! The only changes I made were to add mint ( needed to use it up) and a can of chickpeas for added protein. Definately will be making this a regular part of my diet. - 5/9/11
