Tomato Rice

Ingredients
2 tbsp olive oil1 slice onion2 sliced tomato1 sliced red bell pepper1 clove garlic1 tsp chili powder2 tbsp chopped cilantro1 diced potato1 tsp salt1/2 cup frozen peas2 cups basmati rice3 cups chicken broth
Directions
Heat the oil and stir fry the onion and garlic for about 5 min. Add the rest of the ingredients except the rice and broth. Stir fry over medium heat for about 5 min.
Add the rice and stir fry for 1 min
Add the broth and bring to a boil, then lower the heat to medium. Cover and cook for 12-15 min. Leave the rice to stand for 5 min, serve. Makes 4 servings
