Vegetable Bake

Ingredients
3 large Idaho potatoes1 large onion1 package frozen spinach1 large tomato3/4 c chicken brothCayenne pepper as garnish (and extra flavor)
Directions
Thinly slice potatoes, tomatoes and onion
Layer first potato, then onion, then tomato in covered glass baking dish
use 1/2 box thawed spinach to form 4th layer
repeat layering in order
pour chicken broth over vegetables
Cover dish
Bake at 350 until potatoes are fork tender
