Cauliflower puree

Ingredients
1 large head cauliflower, chopped into 1" pieces2 tbsp mascarpone cheese (or cream cheese)2 cloves of garlic, coarsely chopped6 tbsp grated parmigiano reggiano cheese1 cup chicken broth
Directions
Bring cauliflower and garlic cloves to a boil in chicken broth (with 1-2 cups water added to cover contents). Turn down heat and simmer for 35 minutes. Strain. Return cauliflower to pot and puree with a hand blender until smooth. Blend in mascarpone and parmesan. Salt and pepper to taste.
