Lentil Soup

Ingredients
Chili powder, 1 tsp Oregano, ground, 2 tsp Curry Powder, 1 tbspPepper, black, 1 tsp Basil, 1 tbsp Salt, 1 tsp Olive Oil, 1 tbsp Carrots, raw, 2 carrot (7-1/2") Celery, raw, 4 stalk, medium (7-1/2" - 8" long)Garlic, 2 cloves Kale, 1 cup, chopped Onions, raw, 2 small Canned Tomatoes, 1 can Water, 10 cup (8 fl oz) Lentils, 2 cup
Directions
In a large soup pot, heat oil over medium heat. Add onions, carrots, and celery; cook and stir until onion is tender. Stir in garlic, oregano, and basil; cook for 2 minutes
Stir in lentils, and add water and tomatoes, salt and pepper. Bring to a boil. Reduce heat, and simmer for at least 45 minutes. Add kale 5 mins before it is complete.

Makes approx 5 2 cup servings.

    This looks fantastic. This is what I'm making for dinner tonight! Thanks for sharing it! Usually when I make lentil soup I add some smoked sausage or bacon. That will be probably the only difference I would make to this recipe. - 2/18/09
