Chicken, Brocolli, Rice Casserole

Make with our without chicken, or add tuna2 Bags White Rice, Boil in Bag Kind1 tsp veggie oil8 oz mushrooms, chopped1 small onion, chopped2 Tblsp flour1 cup, 2%milk1 cup cheddar cheese10 oz frozen broccoli, thawed and drainedsalt to tastenonstick cooking spray
Preheat Oven to 375,
Cook Rice according to package directions,
heat oil in medium skillet,
saute mushrooms, onions and garlic for 5 mins, SPrinkle flour over mixture and stir until everything is fairly well coated,
Add milk and bring to boil
Reduce heat and cook for 5 mins
Stir in 3/4 cup chesse and heat until melted
Add brocolli, rice, and grilled chicken pieces
Mix WELL
Spray a casserole dish with cooking oil, and add mixture.Sprinkle top with remaining chees and cover with aluminum foil
Bake for 10 mins.
Makes 6 servings approx.
