Japanese Chicken Salad

Ingredients
Salad:2 cups water1/2 cup of chicken broth/stock1 lb. skinless, boneless chicken breasts1 (2") piece of peeled ginger, sliced12 cups (1 head) torn iceberg lettuce1/2 cup chow mien noodles1/4 cup almonds2 tbsp. toasted sesame seedsDressing:1/4 cup splenda1/4 cup lemon juice2 tsp. canola oil1/4 tsp. salt1/4 tsp. pepper*Note: The first four ingredients can be substituted for really any type of chicken you want (grilled, baked, pre-made, etc.)*
Directions
Bring water and chicken broth/stock to a boil. Add chicken and ginger; bring to a boil. Reduce heat to low and simmer 20 minutes. Cool chicken in broth; shred with fork.
Whisk together all ingredients for dressing.
Combine lettuce, noodles, almonds, and sesame seeds. Add chicken and dressing; toss to coat.

Makes 12 1-cup servings.

    One of my favorites---especially from Applebee's--close anyway!!! I like to use bbq'ed chicken in this and then use the really good salad greens--not iceberg lettuce!! - 1/31/09

    I went to Applebee's and finally saw the salad you were talking about-lol. The base ingredients are the same but it tastes totally different b/c of the dressing they use. Still good though.
