Lentil Soup with Kielbasa

2 tbsp olive oil2 large carrots, peeled and diced1 large onion, diced3 cloves garlic7 oz. kielbasa sausage6 cups water2 cups lentils, picked over and rinsedone 28 oz. can tomatoes with liquid2 tsp dried thyme1 1/2 tsp balsamic vinegar1 tsp ground black pepper

heat oil, add veggies. stir in water, lentils, tomatoes, thyme & cayenne pepper.
Bring to a boil, reduce the heat, and simmer until lentils are tender, 30-45 minutes. Stir in kielbasa, balsamic vinegar, and black pepper. Cook for 5 minutes or until sausage is heated.
