Greek Lemon Chicken

Ingredients
Directions
1/3 cup olive oil1/4 cup lemon juice 1 T Greek seasoning (I use Cavender's salt free)1 tsp. grated lemon zest Salt and pepper to taste
Mix ingredients in large zip-top bag. Add chicken (this is enough marinade for a 4-5 lb. chicken) close bag and refrigerate at least 3 hours or over night.
When ready to cook-
Preheat oven to 450 and put chicken in roasting pan, breast side down. Roast about 25 minutes, then turn breast side up and baste with pan juices. Lower heat to 350 and roast about another 35-45 minutes, or until top is browned and instant read thermometer reads about 165.
Let rest 10 minutes before carving.
You can use this marinade for chicken pieces if you don;t want to roast a whole chicken.
