Carrot Salad

Ingredients
1 large carrot1 1/2 yellow apple (fuji apples very good!01/2 cup raisins1/3 cup vanilla yogurt 1 Tbsp. lemon juicedash cinnamon1/3 cup chopped toasted walnuts (optional - I did figure this in to the calories as it is so good with them)
Directions
1. Grate the carrot and apple in food processor.
2. Pour boiling water over raisins to make them plump - strain after 5 minutes.
3. Toss it all together.
Enjoy!
