Easy Baked Stuffed Jalapeno Peppers

12 medium fresh jalapeño peppers4 oz. cream cheese, softened1 1/2 cup (6 oz.) finely shredded Cheddar**2-3 slices bacon, cooked & crumbledJalapeño pepper sauce (I use Trader Joe's)**Delicious with smoked Gouda also.If you want the baked peppers hot, mix in some pepper seeds with the cheeses.
Cut peppers in half lengthwise; remove seeds (reserve) & membranes. Cook peppers in boiling water 5 to 10 minutes ( for spicy, 5 minutes, for mild, 10 minutes). Drain well. Combine cheeses with bacon (and reserved seeds for hot peppers); heap into pepper halves and sprinkle with a couple drops of jalapeño pepper sauce. Place on baking sheet and bake in 400F oven for 5 minutes until cheese melts.

These were really good and filling. Be sure not to over boil as the peppers easily get mushy and un-flavorful. The cream cheese helps to keep the cheese on the peppers nicely. They were a tad bit greasy and that's the only reason I didn't give them a 5 star. This is a keeper! - 1/3/09

If you try using the smoked Gouda I think you'll find them less greasy.

I replaced the bacon with Hot Sausage (I do not care for bacon), and omitted the cheese. Cooked the cream cheese and sausage in a skillet and stuffed the whole (seeded & de-veined) pepper. I then baked for 45 minutes @ 400 degrees. Just a little variation. I got the recipe from ChiliGrill.com - 1/7/10
