Beef 'n Rice Mexi-Bowl

1 3/4 # extra lean ground beef1/2 cup chopped red onion1 red bell pepper, chopped1 cup frozen kernel cornJuice from one lime1 cup salsa2 Tbsp. chili sauce1 tsp ground cumin1 cup 2% shredded cheddar cheeseBaked (crushed) Tostito ScoopsFat Free Sour CreamSteamed Rice
In sauce pan, cook rice according to package directions. In hot skillet, brown beef and onion; drain. Remove from skillet. Using Fat-free cooking spray, saute red peppers and corn just until crisp-tender. Stir in beef, lime, salsa, chili sauce and cumin. Cook 2-3 minutes. In individual bowls, serve meat mixture over a 3/4 cup portion of rice. Top with shredded cheese, crushed tortilla chips and a dollop of sour cream. Serve grapes or salad on the side. Makes 4-6 servings at 1.5 cups each.
