Cod on a bed of spicy vegetables

125g cod loin200g frozen spinach200g canned tomatoes, chopped1 medium onion, sliced1 tbsp olive oil1 clove garlic1 tsp parsley1 tsp garam masala or curry powderblack pepper
Serves 1
Saute the onion and garlic in the olive oil until soft but not browned. Add the tomatoes, spinach, black pepper, parsley and garam masala or curry powder. Heat, stirring regularly until the veg are heated through and the liquid has reduced.
Microwave the fish (time will depend on power of your microwave).
Spread the vegetable mixture out on a plate and serve the fish on top of it. Enjoy!
