1 pound boneless skinless chicken breasts1 (16 oz) jar of salsa1 package taco seasoning
Cook in crock pot for 8-10 hours on low. Shred meat using forks, and serve on whole wheat tortillas with 2% cheddar cheese and non-fat refried beans. (Calories not included.)

This was outstanding! This could also be used as the base for chicken nachos which is what I did! I added shredded lettuce, light sour cream, chopped tomatoes, chopped red onion, fat free refried beans, and fat free shredded mexican cheese and it was delicious! Thanks for this recipe! - 1/23/11

It was so easy, took me maybe 3 minutes to put together. I added black beans. used frozen chicken and cooked on high. I even gave it the kids by making it quesadilla style and adding sour cream. My company raved about it! definitley making it again! might add red pepper next time. - 2/5/10

Also added a can of black beans and a can of corn. The only thing that I had on hand was a large package of fryer chicken so I skinned it and used it in the crock-pot as the directions stated. De-boned the chicken while shredding. Meat was so tender that it fell off the bone. We loved this recipe! - 1/28/12
