Carmelized Onion & Brie Bread Pudding

2 tbsp olive oil3 onions thinly sliced1 Tbsp balsamic or wine vinegar1 tbsp honey1 tsp dried thyme or few fresh sprigs5 cups day-old baguette1 cup diced brie cheese3 whole eggs3 egg whites1 cup fat free evaporated milk1 cup 1% milk1/2 tsp nutmeg, salt & pepper
Heat large skillet, add oil and fry onions stirring often until deep golden brown. If using the fresh thyme, add sprigs to onions while carmelizing, then remove stems. Stir in vinegar, honey, & thyme (if using dry).
In large bowl toss together bread, cheese and onion mixture; spoon into shallow, greased 8-cup gratin dish.
In bowl whisk eggs, milk (both), nutmeg, salt and pepper; pour over bread and press. Let stand until liquid is absorbed 20 min.(Make-ahead: cover and refrigerate for up to 24 hrs).
Bake in 350F oven until crisp, browned, and knife inserted in centre comes out clean, about 45 min.
