Easy tomato omelet

2 Large eggs25 grams Goat's cheese, soft10 grams of sundried tomato paste10 grams of milk 3 cherry tomatoes (halved)3 fresh basil leaves
This makes one serving for one person.
Whisk the eggs, milk and tomato paste until blended together.
Tear the basil leaves up and sprinkle in and whisk again.
On a medium flame, heat a non-stick frying pan (no oil).
Crumble in the goat's cheese and add the tomatoes. Whisk for a few seconds before turning the mixture into the heated pan.
Leave for 30 seconds before pushing the omelet away from the sides of the pan and into itself.
Keep doing this until it is of a consistency and texture that appeals to you (i like mine quite runny!) and then serve and eat immediately! I have mine with a nice cup of Earl Grey Tea!
