1 cup brown rice2 14-ounce cans 99% FF chicken broth 2 tbsp. olive oil2 cups chopped celery1/4 tsp. black pepper1/4 cup chopped onion8-ounce can sliced water chestnuts6.5-ounce can mushroom slices, drained
Makes 6 servings
Pour olive oil into pan and turn burner on medium. When oil gets hot, add celery and green onion. Cook until slightly brown. Add chicken broth, rice, pepper, water chestnuts and mushrooms.
Cook 45 to 50 minutes until rice is tender and liquid is absorbed.
