Dark Chocolate Chip Oatmeal Cookies

Ingredients
1 c butter, softened1 c Rapadura or other dark raw sugar2 large eggs2 t vanilla2 c whole wheat pastry flour1 t baking soda1/2 t salt3 c uncooked rolled oats1 (10 oz) pkg 70% dark chocolate chips
Directions
1. Preheat oven to 350 degrees.
2. Beat butter and sugar with electric mixer until creamy. Add eggs and vanilla, beating well.
3. Lightly spoon flour into dry measuring cup, and level with a knife. Combine flour, baking soda, and salt in a bowl, stirring well. Add oats; stir well. Add to butter mixture; stir until well blended. Gently stir in chocolate chips. Drop by rounded teaspoons onto baking sheets lined with parchment paper. Bake at 350 degrees for 10-12 minutes or until brown around edges. Cool on pan for a couple minutes until firm Transfer cookies to wire racks to cool.
Makes 6 dozen little cookies.
