Cauliflower Soup

2 T Olive Oil1 Onion, coarsly choppedsalt and pepper2.5 lbs cauliflower, cut into florets, 1 can Swanson Natural Goodness Chicken Broth1-3 t fresh lemon juice
In large dutch oven, heat olive oil over medium heat.. Saute onion in 5-7 minutes. Season with salt.
Add chicken broth, cauliflower and enough water (4-6 cups) to cover. Bring to boil, reduce to medium, and simmer until vegetables are soft, about 20 minutes
Working in batches, puree broth and vegetables in blender until smooth, transferring to clean pot as you work. (Hint: to prevent splattering, fill blender halfway, adn allow heat to escape by removing cap and covering hole with a dishtowel.)
Adjust soup's consistancy by witha little water if neccessary. Season with a little more salt, pepper and lemon juice to taste.
