Chicken & Tomato Curry

Ingredients
3 Chicken Breasts cut into pieces3 fresh juicy Tomatoes3 Onions sliced2 TBS Curry powder2 cloves Garlic1 TBS olive oilSalt and pepper to taste1/4 cup water if needed
Directions
Chop chicken into bite size pieces and brown in olive oil. Remove chicken and cook onion and garlic until soft. Add curry powder and cook over low heat for a few minutes to bring out flavor. Add the chicken back in and rest of ingredients. If extra sauce is needed add in some water or you can substitute chicken broth. Cook until chicken is done and serve over brown rice.

Canned tomatoes can be used as a substitute. Use curry to taste and add water only if needed.
I use a mix and mild and hot curry powders for a depth of flavor and then some spice.
