Black Cod with Lemon Vinagrette and Herb Salad

Shallots, 1/3 cup chopped Lemon Juice, 2 tbsp.Lemon zest, 2 tsp. packedOlive Oil, 6 tbsp Cod (fish), 16 oz Lettuce, red leaf (salad), 1 cup shredded Basil, 15 leaves Italian Parsley, 1/2 cup Endive, 2 head SaltPepper
Mince shallots and place in small bowl for vinagrette. Add lemon zest and lemon juice (best from a fresh lemon). Add olive oil and whisk to combine. Add salt and pepper to taste.
Chop endives and shred red leaf lettuce into larger bowl. Add parsley and basil (chopped roughly). Season fish fillets on both sides with salt and pepper and sear in a pan on medium heat until just opaque and fish flakes easily. Top with 1 tbsp. of vinagrette per serving and add remaining dressing to salad and toss.
Serve cod on plate and top with dressed herb salad.
