Ingredients
60g cooked chicken80g cooked king prawns2 spring onions½ red pepper4 medium mushrooms½ cup frozen peas120g cooked ricePinch of mixed herbs1 tsp olive oil
Directions
Dice all the vegetables and cut the chicken into bite-size pieces.
Heat the oil in a frying pan or wok and add the vegetables.
Cook gently over a medium heat until the vegetables start to soften.
Add the chicken and the rice and heat them through, then add the mixed herbs and the prawns. Make sure the prawns are thoroughly heated through before serving.
