White Bean Chicken Chili

Ingredients
Beans, white, 1 cupBeans, pinto, .5 cupCelery, raw, .5 cup, diced Carrots, raw, .5 cup, chopped*Tomatoes, red, ripe, raw, year round average, 1 cup, chopped or slicedOnions, raw, .25 cup, chopped Pepper, hot chili, green, raw 1/2 Cup, 1 serving Chicken Breast, no skin, 1 breast, bone and skin removedChicken Broth, 3 cup (8 fl oz)Garlic, 2 cloveSalt, 1 tbspPepper, black, 1 tbspChili powder, 1 tbspParsley, 1 tbsp*Cumin seed, 1 tbsp
Directions
Mix beans in 4.5 cups of water in soup pot, bring to a boil and simmer on medium heat for 1.5-2 hours while beans soften (add a little extra water if it boils down before the beans are soft). Do not drain water left in pot.

Add all other ingredients at once to pot of beans and water reduction (cook for 30-45 min more).
