Tofu Egg Salad

Ingredients
1. 12 ounce package silken lite firm mori-nu tofu2. 1/4 cup nasoya mayonnaise3. 2 Tablespoon Dijon mustard4. 1/8 teaspoon cayenne pepper5. 1/2 teaspoon turmeric6. 2 Tablespoon dried parsley7. 1/2 Tablespoon dried dill8. 1/4 cup chives9. 1/4 teaspoon salt (or to taste)
Directions
1. Drain tofu well, cut into 1/4's wrap in paper towel and weigh down for about 15 minutes.
2. Mash tofu with fork until mashed into crumbles, add remaining ingredients and mix well.
3. Refrigerate overnight to allow flavors to mix.
4. May be rolled burrito style in lettuce leaf or use in a sandwich or pita pocket.
