Slow Cooker/Crock Pot Low Sodium "White Chili"

Ingredients
1/2 cup each DRY navy and great northern beans2 c chopped red onion3 c chopped roma tomatoes2 c cubed boneless/skinless chicken breast (about 2 breasts)1 c Chicken Broth, College Inn brand Light & Fat Free2 Tbsp chopped garlic1/2 Tbsp Cayenne Pepper1 tsp Ground Cumin 1 tsp Oregano leaves2 tsp coarse black pepper
Directions
Soak beans overnight (or use quick soak directions on back of package). Drain and rinse well. Add 4 cups water and bring to a light boil, reduce heat and simmer about 45 minutes. Drain.
Put all ingredients in crockpot and cook on low 4 - 6 hours.
Serving size = 1 cup.

Note: I love my chili over brown rice.
