Nugget Batter

Ingredients
1/3 c GF flour1/4 tsp sea salt1 1/2 tsp vinegar1/4 tsp baking soda1/3 c water
Directions
Mix flour and salt in bowl. Combine vinegar and baking soda in another small bowl, quickly dumping it in the flour as it reacts. Quickly add water. Whisk well. Let stand 5 minutes to thicken. Heat oil in frying pan. Mix nugget sized pieces of chicken (or fish) in batter and let them sit while the oil heats. Fry until golden brown and cooked through.
