Whole wheat Chocolate Chip cookies

1 1/2 cups oat meal2 ¼ cups whole wheat flour1 ½ tsp baking soda1 tsp sea salt2 eggs¾ cup turbinado sugar (sugar in the raw)2/3 cup olive oil 1 tsp vanilla1 cup dark chocolate +71% chopped½ cup walnuts or pecans chopped
Pre-heat oven to 375.
Blend oat meal until grainy/powder. Mix in a bowl with flour, baking soda and sea salt. In a separate mixing bowl beat olive oil, sugar, eggs and vanilla. By hand, add dry ingredients one cup at a time until fully incorporated. Mix in chocolate chips/chunks and nuts.
Spoon cookie dough one inch apart onto a foil lined cookie sheet or spread cookie dough into 9x9 baking pan lined with foil coated with olive oil.
Bake 10-12 minutes or until firm to the touch.
Makes about 36 cookies.
