Gautier Grilled Tuna

1 lb Tuna at least ½ - 1 inch thickSalt and Pepper to taste½ tsp thyme leaves½ tsp basil½ tsp garlic powder½ tsp onion powder2 tbsp olive oil 2 tbsp lemon juice⅛ tsp cayenne if desired
Pour lemon juice over both sides of tuna. Mix salt, pepper, thyme, basil, garlic, onion and cayenne together in a bowl. Sprinkle evenly over both sides of tuna. Lightly brush with the olive oil.
Cook over medium direct heat skin side up for 10 minutes. Flip over and cook an additional 10 minutes.
*** Tips: Make sure grilling surface is clean. Suggest spray non flammable grilling spray onto grill (Pam Grilling Spray or Weber Grilling Spray). Use a long handled fish basket sprayed with grilling spray. Use hickory or coffee wood that has been soaked.
