carrot ginger dressing

Ingredients
2 carrots 2 tbs. fresh ginger2 Tbs. onion, any type, I've used white or green2 Tbs. olive oil or grapeseed oil1 Tbs sesame oil 2 tbs. water2 Tbs. sweet white miso paste1 1/2 Tbs. rice wine vinegar
Directions
Place carrots, ginger and onion in the bowl of a food processor. Chop finely. Add the miso, vinegar and oils and puree until mostly smooth. Add a little water a tablespoon at a time and mix until your desired consistency is reached.

This makes 8, 2 Tablespoon servings. About a cup total.
