Zesty Vegan Potato Salad

Ingredients
* Steamed peeled potatoes (3 small potatoes, approx. 2 cups chopped)* 1/4 cup lowfat (eggless) mayonnaise* 1/2 cup chopped celery* approx 1 Tbsp. soy sauce* approx. 1 Tbsp. rice vinegar (apple cider vinegar could be used to substitute)* 1 large garlic clove, minced* a few shakes of dried dill weed* freshly ground black pepper, to taste* chili powder, to taste(note: dill, black pepper, and chili powder are not included in the nutrition calculation)
Directions
steam the peeled potatoes for approx. 15 minutes. let potatoes cool slightly, then chop coarsely.
mix all other ingredients together.
finally, stir in the chopped potatoes.

makes approx. 4 1/2 cup servings
