Spiced Pumpkin Gingerbread Waffles

1 can pumpkin, 15 oz.1 2/3 c. white self-rising flour1/4 c. sugar1/4 c. brown sugar3/4 c. egg beaters egg substitute1 1/2 c. fat free milk2 tsp. ground ginger1 tbsp. ground cinnamon1 tsp. ground cloves1 tbsp. ground nutmeg1 tbsp. vanilla extract
Mix all ingredients together in a bowl. Spoon mixture into waffle maker and cook according to manufacturer's directions, about 3-5 minutes. Makes about 16 4" waffles. Freeze extras and pop them into the toaster for a quick breakfast.
Sweet and tasty enough to eat alone or top with maple syrup, honey, or fruit preserves.

I made these this week for breakfast, & OMG!!! These are AMAZING. I am vegan, so I subbed out 3 tbsp + 3/4c hot water for eggs, and plain almond milk for skim milk, which wouldn't change the taste. I had them with the apple pie topping I found on SparkRecipes. TOO good! THANK YOU!!!!! - 12/14/10
