Spiced Pumpkin Gingerbread Waffles

Ingredients
1 can pumpkin, 15 oz.1 2/3 c. white self-rising flour1/4 c. sugar1/4 c. brown sugar3/4 c. egg beaters egg substitute1 1/2 c. fat free milk2 tsp. ground ginger1 tbsp. ground cinnamon1 tsp. ground cloves1 tbsp. ground nutmeg1 tbsp. vanilla extract
Directions
Mix all ingredients together in a bowl. Spoon mixture into waffle maker and cook according to manufacturer's directions, about 3-5 minutes. Makes about 16 4" waffles. Freeze extras and pop them into the toaster for a quick breakfast.

Sweet and tasty enough to eat alone or top with maple syrup, honey, or fruit preserves.

    I made these this week for breakfast, & OMG!!! These are AMAZING. I am vegan, so I subbed out 3 tbsp + 3/4c hot water for eggs, and plain almond milk for skim milk, which wouldn't change the taste. I had them with the apple pie topping I found on SparkRecipes.     Very, very nice! This has been a gingerbread year for me! I revised a little with Brown Sugar Splenda for the sugars and made my self rising flour with unbleached flour. - 2/22/14

    Very Good. Spices are quite strong but I didn't mind. I only used a pinch of ginger though because I'm not a big fan and I liked them quite a bit. I'll probably make them again. - 11/3/11
